Pecan Pie Bars

I brought these to my niece, Georgia's, luncheon in honor of her baptism. They were a super hit. So much so that when I went to leave, my sister-in-law and her mother chased me down and begged for the few I had left. They are rich with butter and eggs and not as sweet as Pecan Pie.

Pecan Pie Bars

Recipe by Clara Honeyager, North Prairie Wisconsin

6 Cups all-purpose flour
1 1/2 C sugar
1 teaspoon salt
2 Cups Butter cubed, (1lb. or 4 sticks)
2 Greased 15" by 10" by 1" Baking Pans
Filling
8 Eggs
3 Cups Sugar
3 Cups Corn Syrup
1/2 Cup Butter Melted, (1/4 lb or 1 stick)
3 Teaspoon Vanilla
5 Cups chopped Pecans

1. In a large bowl, combine the flour, sugar and salt. (If using salted butter skip the salt). Cut in butter until crumbly. Press onto the bottom and up the sides of both pans. Bake at 350 for 18-22 min. or until crust edges are beginning to brown and bottom is set.
2. While crust is baking combine with a whisk (AVON'S Ball Whisk works great, check it out at my website: www.youravon.com/mbeach), all the filling ingrediants except Pecans. When all mixed add Pecans, and stir with a spoon.
3. When Crusts are ready pour filling over crusts. Bake for another 25-30 min or until edges are firm and center is alomst set. Cool on wire racks. Cut into bars. Refrigerate until ready to serve.

I thought it made alot but they were so good, it wasn't enough.

Mom

Spring is here finally. throw out the old dark colors of winter and try on the bright new colors of spring. Mother's day is coming; I was blessed with an exceptional mother and want to pay tribute to her.

She was raised in the Appalachians of West Virgina during WWll by her widowed grandmother, who had children of her own to raise. Her life was hard, compounded by Psoriasis, a skin disease that is unsightly as well as itchy and painful, that covered her entire body. She was smart and imaginative and with the help of her church and teachers she was able to go away to college. She was the first in her family to do anything like that.

As with many women of her generation she married without finishing her degree and promptly began having children. She had no experience in childcare or housekeeping so she learned everything the hard way. Pregnancy was very hard for her as she was sick most of the time, yet she brought five children into the world. She lost her first daughter at the age of two. Her third child, a son, was born with many physical problems. It is by the grace of God and her care as a mother that he is alive, working as a nurse, with a beautiful wife and family of his own.

Always plagued with financial stress during her life, she decided to go back to school. She wanted to help those that are the most needy, children, and chose to prepare for a career in Social work. She got her Bachelor's degree, then her Master's degree while I was in high school. This was not the norm for women of her time so she broke the mold and followed her heart. She again was the first in her family to get a college degree. From her example, her children have 5 Associate Degrees or equivalent, 2 Bachelor's degrees and 1 Master's Degree. Her children are all honest, good people, raising good children, who pay their own way and serve in their church and community. Not bad for a dirty little appalachian girl whose parents were alchohalics and was an unwanted burden on her grandmother.

I love you mom and thank you for your love and support.

First Time


Hi, I'm new at this blogging thing. I thought it would be fun to share things that appealed to me. I got this Lipstick test at an AVON meeting. I was surprised at how accurate it was in describing me. See how it fits you. My lipstick is #3, all the ones I have look like this and the description fits me pretty close.

I come from a family of cooks, men and women, starting for me with my paternal Grandma. She was a farm wife and cooked 3 meals a day, for her 12 children, farm hands and church events. She was know for her pies throughout the Teton Valley in Idaho. She did nothing fancy or exotic but she made ordinary ingredients into something special. On Thanksgiving, on top of the Turkey and all the traditional trimmings, Grandma always had a pot of Chicken and Homemade Noodles. Forget everything else that was the best. Here is her recipe for the Noodles.
Boil a chicken to make the stock add Salt and pepper to season. When done take the chicken out to cool.
Noodles
2 C Flour
1 T melted Butter
4 Eggs
1 t Salt
a little Cream
Make a mound of the flour and salt with a well in the middle. Put the eggs and butter in the well. Mix thoroughly, adding cream as needed to moisten. Shape into a ball and let it rest for 15 min. Roll very thin on a well floured surface. Sprinkle with more flour and roll up like a jelly roll, and cut with a sharp knife. You can make the noodle any width that appeals to you. Let the dough stand for a few hours to dry out.
While dough is resting, strain the chicken stock. Pick the meat off the chicken and put it back into the stock.
When you are ready to cook, heat the stock to boiling then add the noodles, one at a time (like putting icicles on the Christmas tree.) If you just throw them all in at once you will have a big clump. Let them cook for about 5 to 10 min.
We liked them as is or over mashed potatoes. MMMM, great for a wintery evening.
The noodles are also delicious cooked in beef stock.
